MacKay, a native of Scotland and former president of the National Highland Cattle Association, raises heritage Highland beef on pasture at Dundonald Highlands in Three Rivers, MI.
His steers have won first place at county fairs for exceptional, prime marbling (that’s almost unheard of from pastured beef)…
That’s because of his expertise in breeding and raising cattle using traditional farming methods.
For example, he keeps his cattle on pasture even when–for the last 90 days–he also supplements their diet of clover and alfalfa grasses with cracked-corn from a local farm.
The result is healthy, nutrient-dense beef that is juicy, tender, and flavorful.
But you can get a Dundonald Highlands beef quarter only a couple times each year and only here.
The Breed
Highland cattle is one of Britain’s oldest cattle breeds, world-renowned for making excellent beef. In fact, the British Royal Family keeps a herd/”fold” of Highlands at Balmoral Castle. It is a breed that developed over hundreds of years in the northern regions of the Scottish Highlands, a land of rugged terrain and harsh conditions. It is both a hearty and docile breed, like the people who come from that land, people who have been described somewhere as “poet-warriors”.

Process was very easy, positive and fast. This was a 1st order so I was not aware of the option to give butcher instructions. Also I ordered 1/4 cow, front section and I was underwhelmed with the size and amount of steaks provided as compared to ground beef.
With that said, the meat has tasted great, the process was customer friendly, and the product is healthy.
I plan to make a 2nd order, trying the rear section and consider providing butcher instructions.

Yum yum the best beef EVER! Have been ordering from Jeff DUBA for a couple years started with just burger bundles but just bumped up to a quarter beef which has not disappointed me so luscious!!
